You can access your age-restricted settings and can change them from the desktop version of Discord.

It will enable you to see servers for users aged 18+ on iOS devices after you have joined them on Discord’s desktop version.
After doing so, force close the Discord mobile app and re-open it to see the changes in action.
Swipe up from the bottom of your screen and swipe up the Discord app in order to close it.
When you will allow access to age-restricted servers, the “This server’s content is unavailable on iOS” on Discord will not be available.
